Cheesy Kielbasa Rice Broccoli (Print-Friendly Version)

Cheesy kielbasa paired with broccoli and rice makes an easy, flavorful skillet dinner everyone will enjoy.

# Ingredients:

01 - ½ tablespoon olive oil
02 - 14 ounces Polska Kielbasa, sliced on a diagonal
03 - 1 small onion, diced
04 - 1 small bell pepper, diced
05 - 2 cloves garlic, minced
06 - ½ teaspoon salt
07 - ½ teaspoon pepper
08 - 1 cup long grain white rice, uncooked
09 - 2 cups low sodium chicken stock
10 - 2 cups broccoli florets, bite size pieces, raw
11 - 2 cups shredded cheese, divided (cheddar blend preferred)

# Steps:

01 - Heat olive oil over medium-high heat in a large, lidded skillet.
02 - Brown kielbasa in the skillet, 3-4 minutes on each side. Remove with a slotted spoon.
03 - Sauté onion and bell pepper until the onion is translucent, working the brown bits off the bottom of the skillet to add flavor.
04 - Add garlic and cook for an additional minute. Season with salt and pepper.
05 - Add rice to the skillet and stir to combine. Continue stirring for 1 to 2 more minutes.
06 - Add the chicken stock and bring to a boil. Reduce heat to low, cover, and cook for 10 minutes.
07 - Without disturbing the rice, add the broccoli to the top of the rice and cover again. Cook an additional 10 to 15 minutes, or until rice is tender.
08 - Stir in the kielbasa and 1 cup of cheese.
09 - Top with the remaining cup of cheese. Cover with the lid and let sit for 2 to 3 minutes, or until the cheese is melted.
