07 - ½ teaspoon paprika
08 - ½ teaspoon salt
09 - ½ teaspoon chipotle powder
10 - ½ teaspoon dried oregano
11 - 1 tablespoon tomato paste
12 - ½ cup red enchilada sauce

13 - 8 taco-sized flour tortillas
14 - 1 jalapeño, sliced
15 - 1 ½ cups romaine lettuce, shredded
16 - ¾ cup tomatoes, chopped
17 - ¼ cup sour cream
18 - ½ cup shredded cheese

# Steps:

01 - In a large skillet, heat olive oil over medium-high heat. Add the ground beef and break it into small pieces with a spatula. Cook for 4-5 minutes until starting to brown, then drain excess grease using paper towels.
02 - Stir in the chopped onion, minced garlic, cumin, chili powder, paprika, salt, chipotle powder, oregano, and tomato paste. Cook for another 3 minutes to combine flavors.
03 - Pour the enchilada sauce into the skillet and mix well. Reduce heat to low and let the mixture simmer for 4-5 minutes until the beef absorbs the sauce.
04 - While the beef is simmering, chop the romaine lettuce and gather the toppings. Optionally warm the tortillas in a microwave or on the stovetop.
05 - Layer the ground beef first in the tortillas, followed by cheese, chopped tomatoes, shredded lettuce, sour cream, and sliced jalapeños. Serve immediately.
