In a large skillet, heat olive oil over medium-high heat. Add the ground beef and break it into small pieces with a spatula. Cook for 4-5 minutes until starting to brown, then drain excess grease using paper towels.

Stir in the chopped onion, minced garlic, cumin, chili powder, paprika, salt, chipotle powder, oregano, and tomato paste. Cook for another 3 minutes to combine flavors.

Pour the enchilada sauce into the skillet and mix well. Reduce heat to low and let the mixture simmer for 4-5 minutes until the beef absorbs the sauce.

While the beef is simmering, chop the romaine lettuce and gather the toppings. Optionally warm the tortillas in a microwave or on the stovetop.

Layer the ground beef first in the tortillas, followed by cheese, chopped tomatoes, shredded lettuce, sour cream, and sliced jalapeños. Serve immediately.
