Salmon Avocado Feta Bake (Print-Friendly Version)

Flaky salmon baked and combined with a creamy avocado-feta mix. A tasty, wholesome meal done in 30 minutes or less!

# Ingredients:

→ Salmon

01 - 4 skinless salmon fillets
02 - 2 tbsp olive oil
03 - 1 tsp lemon zest
04 - 2 tbsp lemon juice
05 - Salt, to your liking
06 - Chopped fresh dill, 1 tsp
07 - Ground black pepper, as needed
08 - Paprika, as much as you'd like

→ Avocado-Feta Topping

09 - 1 diced large avocado
10 - Crumbled feta cheese, 1/3 cup
11 - Chopped fresh dill, 1 tbsp
12 - 1/2 lemon, juiced
13 - Salt and pepper, adjust for taste
14 - 1 tbsp chives, sliced thin

# Steps:

01 - Turn on the oven to 400°F and lightly coat a baking pan with non-stick spray.
02 - Combine the avocado pieces, feta, dill, chives, lemon juice, salt, and pepper in a mixing bowl. Chill in fridge.
03 - Dry the salmon with paper towels and set in the baking dish. Mix olive oil, lemon juice, zest, and dill; brush this on the fillets. Season with salt, pepper, and paprika.
04 - Pop the salmon in the oven for 10-12 minutes, or until it flakes when you press it with a fork.
05 - Dish up the salmon with a generous spoonful of the avocado-feta mix on top.
