Savory Oatmeal Tomato Sausage (Print-Friendly Version)

Oatmeal goes savory with sausage, tomatoes, greens, and herbs for a hearty, flavorful meal.

01 - 2 teaspoons sunflower oil or neutral oil, such as canola or avocado, divided
02 - 1 ½ ounces fully cooked sweet Italian chicken sausage (1/2 link)
03 - 1 cup low-sodium vegetable broth
04 - ½ cup old-fashioned rolled oats
05 - ⅛ teaspoon salt
06 - ½ cup grape tomatoes, halved
07 - ⅓ cup packed fresh herbs, such as parsley and/or cilantro
08 - ½ cup packed baby arugula
09 - 1 tablespoon pine nuts, toasted
10 - 1 large lemon wedge

# Steps:

01 - Heat 1 teaspoon of oil in a small nonstick or cast-iron skillet over medium heat. Add the sausage and cook until evenly browned, about 10 minutes.
02 - Bring the vegetable broth to a boil in a small saucepan over high heat. Stir in oats and salt, reduce heat to medium, and cook, stirring occasionally, until the oats are tender and most of the liquid has been absorbed, about 5 minutes.
03 - Thinly slice the cooked sausage into coins. Stir the sausage, tomatoes, and fresh herbs into the cooked oatmeal. Transfer to a bowl.
04 - Top the oatmeal with baby arugula and toasted pine nuts. Drizzle with the remaining 1 teaspoon of oil and serve with a lemon wedge, if desired.

01 - Toasting the pine nuts enhances their flavor. Cook in a small dry skillet over medium-low heat, stirring constantly, until fragrant, 2 to 4 minutes. Let cool before using.
