Sandwich-Styled Rice (Print Version)

# Ingredients:

→ Main Ingredients

01 - 1 egg
02 - 1 cup halloumi, chopped into small pieces
03 - 3 slices rosemary ham, cut into chunks
04 - 3 slices salami, chopped
05 - 3 slices mortadella, diced up
06 - 1/2 small onion, finely chopped
07 - 3 cups cold, cooked long-grain rice (made at least 24 hours before)

→ Vegetables and Herbs

08 - 1/4 cup roasted red peppers, diced
09 - 1/4 cup banana peppers, chopped up
10 - Some shredded romaine to serve with
11 - 1/4 cup fresh basil, sliced up

→ Sauces and Oils

12 - A good splash of olive oil for frying
13 - 2 tablespoons of soy sauce
14 - 2 tablespoons sesame oil
15 - 2 tablespoons balsamic vinegar, plus extra for drizzling at the end

# Instructions:

01 - Crank up the heat on a pan with some olive oil and toss in the onion for about 5 minutes. Add the halloumi and cook until it starts turning golden, around another 5 minutes.
02 - Throw in the chopped meat pieces and stir around for 3-5 minutes until they get a bit of color on them.
03 - Tip in the cold rice and stir to combine. Let it fry for around 5 minutes, mixing every now and then.
04 - Clear a little spot in the pan, crack in the egg, and scramble it. Then mix it all into the rice.
05 - Sprinkle in the rest of the ingredients, give it another 5 minutes to cook, and dish it up with some crispy lettuce and a drizzle of extra balsamic.

# Notes:

01 - Day-old rice works way better than freshly made rice.
02 - Feel free to swap in any other Italian meats you like.
03 - This is a fantastic dish for using up leftover rice.
