Mango Wings with Heat (Print Version)

# Ingredients:

→ Mango Habanero Sauce

01 - 1 ripe mango, peeled, seed removed, and cut into chunks
02 - 3 medium habanero chilies
03 - 3 garlic cloves, chopped roughly
04 - 2 tbsp white vinegar
05 - 3 tbsp freshly squeezed lime juice
06 - 3 tbsp pure maple syrup
07 - 1/2 tsp smoked paprika
08 - 1 tsp sea salt

→ Chicken Wings

09 - 10 full chicken wings, split into drumettes and flats
10 - 1 tbsp baking powder without aluminum
11 - 1/2 tsp garlic powder
12 - 1/2 tsp smoked paprika
13 - 1/4 tsp freshly ground black pepper
14 - 1/2 tsp salt

# Instructions:

01 - Throw the mango, habaneros, garlic, vinegar, lime juice, syrup, paprika, and salt into a food processor. Blend them up until smooth and creamy.
02 - Whisk together the baking powder and all the seasonings in a bowl. Pat the wings completely dry, then toss them well in the powder mixture until fully coated.
03 - Set your oven to 425°F. Cover a baking sheet with foil, place a wire rack on top, and coat it lightly with cooking spray.
04 - Put the wings skin-side facing up on the rack. Cook for 20 minutes, flip them, and bake another 10. Repeat until the inside hits 160°F.
05 - Let the wings cool for about 5 minutes. Toss them in a large bowl with 1/3 cup of the sauce. Serve the rest of the sauce on the side as a dip.

# Notes:

01 - Make the sauce as spicy as you want by adding seeds from 1, 2, or 3 of the chilies.
02 - You can prep the sauce early and store it in the fridge.
03 - Defrost wings fully before cooking if they’re frozen.
