Tangy Beet Mix (Print Version)

# Ingredients:

→ Main Ingredients

01 - 2 boiled beets, medium to small size
02 - Half of a red onion, finely sliced
03 - Half a cup of green olives, chopped into small pieces

→ Dressing

04 - 1/4 cup fresh lemon juice
05 - 3 tablespoons olive oil
06 - 1 tablespoon honey
07 - 1 teaspoon of grated lemon peel
08 - 1 teaspoon kosher-style salt
09 - 1/2 teaspoon freshly ground black pepper

→ Herbs

10 - 1/2 cup of parsley, finely chopped
11 - 1/2 cup of mint, finely chopped

# Instructions:

01 - Mix the onion, chopped olives, lemon juice, olive oil, honey, lemon peel, salt, and black pepper in the bowl for serving. Let it sit for 30 to 45 minutes.
02 - Chop the beets into cubes. Toss them into the bowl along with parsley and mint.
03 - Let everything sit together for 15 minutes before eating. Can be served cold or warm.

01 - You can prepare this ahead of time and chill it in the fridge.
