Sausage & Tortellini Soup (Print Version)

# Ingredients:

→ Meat and Base

01 - 1 pound of Italian sausage, ground
02 - 1 small diced yellow onion
03 - 3 minced garlic cloves
04 - 3 tablespoons all-purpose flour

→ Seasonings

05 - 1 pinch of red chili flakes
06 - 1 teaspoon dried basil
07 - ½ teaspoon oregano
08 - 1 teaspoon hot sauce
09 - ¼ teaspoon black pepper
10 - ½ teaspoon dry mustard powder
11 - A small pinch of cayenne

→ Liquids and Add-ins

12 - 5 cups of chicken stock
13 - 1 cup heavy whipping cream
14 - 2 cups of chopped kale
15 - 2 cups of tortellini pasta (about 10 oz)

# Instructions:

01 - Brown the sausage with the onions for 8-10 minutes. Remove grease. Add minced garlic and cook for an extra minute.
02 - Sprinkle in the flour and keep stirring for 1-2 minutes. Mix in the spices and keep it moving.
03 - Pour the broth and cream into the pot. Let it come to a boil, then drop the heat to simmer.
04 - Toss in the kale and tortellini, letting it simmer for 3-5 minutes until the pasta is done. Add salt if needed.

# Notes:

01 - Works with a slow cooker too
02 - Spinach can replace kale as an alternative
03 - To make it better for leftovers, cook tortellini separately
