Spoon the meat mixture evenly into a 12-cup muffin tin. Bake for 20 minutes or until fully cooked.

Steam sweet potato chunks for 10-12 minutes, then mash them up with salt and ghee until smooth.

Spread the mashed sweet potato on each meatloaf muffin. Add extra barbecue sauce on top if you'd like.
