Mini Sweet Potato Loaves (Print-Friendly Version)

Mini BBQ-glazed loaves with creamy sweet potato on top, ready to enjoy in no time.

# Ingredients:

→ Base for Meatloaf

01 - 3 garlic cloves, finely chopped
02 - 1 teaspoon dried thyme
03 - 1/2 teaspoon ground black pepper
04 - 1/2 cup barbecue sauce (Whole30-approved)
05 - 1 small onion, finely diced
06 - 2 teaspoons ghee or oil for cooking
07 - 1 1/2 pounds ground beef
08 - 1/2 teaspoon salt

→ Sweet Potato Layer

09 - 1 tablespoon ghee or coconut oil
10 - 2 medium sweet potatoes, peeled and cut into chunks
11 - 1/4 teaspoon salt

# Steps:

01 - Heat your oven to 350°F to get it ready for baking.
02 - Warm up oil in a pan, and cook diced onions until soft. Toss in garlic and stir for about 30 seconds.
03 - In a bowl, mix up ground beef with onion mixture, barbecue sauce, thyme, pepper, and salt until blended.
04 - Spoon the meat mixture evenly into a 12-cup muffin tin. Bake for 20 minutes or until fully cooked.
05 - Steam sweet potato chunks for 10-12 minutes, then mash them up with salt and ghee until smooth.
06 - Spread the mashed sweet potato on each meatloaf muffin. Add extra barbecue sauce on top if you'd like.
